A three-part love story...

I can't browse the internet (i.e. Twitter) without seeing at least one post about the game-changing Air Fryer. I was curious, so I recently purchased my first Ninja Air Fryer. It is, in fact, a game-changer. I've been horrible at cooking at home and I noticed that I spend A LOT on ordering out during #quarantine. My first quick meal was vegetable egg rolls and it was delicious!
Today, I felt inspired to roast vegetables in my air fryer. BTW, you can get yours on Amazon for a super affordable price. Here's why! Of course, I was browsing the internet (all the time, really) and I see this recent post on #Instagram by Tracee Ellis Ross. I LOVE Tracee - she's an unproblematic Queen and "friend in my head". Umm, she looks AMAZING - of course she does. I'm INSPIRED.
Anyway, so I gotta practice being disciplined this week. If you know me, you know that's somewhat difficult because I LOVE sweets. I decided to roast carrots, broccoli, and Mediterranean potatoes in my air fryer. I added white wine & balsamic vinegar w/ seasoning, onions, thyme, olive oil, and ginger. I was praying it came out good (it did). This is the pre-roast prep:

oil before placing it in the air fryer:

This is the final roast - it smells good, looks good, & taste amazing! I roasted it in the air fryer at 375 degrees, and then at 360 degrees for 18-20 minutes. I sprinkled a little salt (like #saltbae) after and viola! I didn't make enough for "meal prep", so I might make this as a side dish again this week. SOOOO GOOD.
